
These little babies have been my go-to snack for the past couple years and especially during this pregnancy since I want to eat all.the.things all the time. These are the perfect snack or quick grab breakfast for several very important reasons: no need to cook anything, they’re healthy and delicious. I have looked at countless recipes and have tried too many variations to count so don’t be afraid to get creative with your add-ins. In my house, chocolate chips are always a must.
Ingredients:
- 1 cup (dry) old-fashioned oats
- 1/2 cup peanut butter
- 1/2 cup ground flax seeds
- 1/2 cup semisweet or dark chocolate chips
- 1/3 cup honey
- 1 tablespoon chia seeds
- A dash of vanilla extract
To make:
Mix all ingredients together, use a cookie scoop and roll into balls, place on a tray lined with parchment paper and let them chill in the fridge. 20 minutes should do the trick. Store in an airtight container and snack on them throughout the week.
